How do you cook a really good irish stew?

I agree, but instead of lamb, use either stewing steak or ox tail for a more traditional stew..a lot of people who make stew, usually add a packet of oxtail soup to the equation, - take about a half pint of the stock and mix it with the soup in a jug and then add it to the stew pot about 10 minutes from the end, it makes all the difference.. enjoy!!
